Baked Avocado Eggs

This is one of those cool things I had seen on Pinterest and after Mr S tagged me in a picture of these on Instagram to give me a subtle hint on what he would like for lunch I finally made them.
I was not really sure about putting the recipe up as it is literally two ingredients then bake in the oven, but after the first attempt was a bit overflowing and overcooked I decided to have another go to perfect it and thought I would share my experience to make it easier to recreate at home.

The key points are make sure you remove some of the avocado flesh and if using large eggs remove some of the excess egg white too.

Ingredients

1 ripe Avocado
2 Eggs
Salt and Pepper

Method

1.Cut avocado in half and scoop out some of the extra flesh to make the opening larger and place on a baking tray, pre heat oven to 190 degrees Fan, 200 degrees, Gas Mark 5

2.Break an egg into a bowl and depending on the size of your egg pour the yolk and as much egg white as fits into the centre of the avocado, I found it useful to place avocado in corner of baking tray so it did not roll around for this step

3.Season and place in the oven for 10-12 minutes until white is set and yolks are just cooked (or however you prefer your eggs)





4.Remove from oven and enjoy with a side salad

5.I used the leftover egg whites and avocado to make a delicious and healthy egg white omelette will the eggs cooked in the oven
