Chocolate Brownie Cupcakes




One of the perks of being pregnant is being able to blame cravings whenever you want to eat something, one evening this week I really fancy warm brownies but did not fancy making up a whole tray so I tried some individual cupcakes instead and they were a success. 
Sorry for the lack of photos but they taste a lot better than they look and were also a great way to use up the few easter eggs we still having lying around. 

Ingredients

125g Milk Chocolate broken up
100g Dark Chocolate broken up
85g Unsalted Butter
2 Eggs
200g Soft Light Brown Sugar
1 tsp Vanilla Extract
140g Plain Flour sieved
60g of chopped Walnuts/Chocolate chips plus extra for garnish

Method

Makes 12
Preheat oven to 170fan/180c/350F/Gas Mark 4

1.Break up chocolate and cube butter, place together in a pan and heat on a low heat for around 3-4 minutes until all melted
2. Place eggs, vanilla and sugar into a stand mixer or handheld whisk for around 5 - 7 minutes until they are fluffy
3. Add in cooled chocolate and butter mixture and combine
4.Add in flour and chopped walnuts for a final mix
5.Place into cupcake cases in a muffin tray and top with a whole walnut
6. Bake for around 15-18 minutes until crispy on top

I served mine whilst still warm topped with orange zest flavoured creme fraiche I had leftover in the fridge from making chicken pie. Delicious.
