As January is now over we can all go back to eating naughty foods, for the few of us that are still trying hard to maintain a more healthy lifestyle these are a great treat. Personally I have been trying as it is a lot harder to shift the weight second time around but food is a big weakness for me, think I may have to go down the exercising route instead.
Although they maybe healthier these brownies are without doubt very moreish.
Makes 16 Brownie Squares
2 ripe Avocados
225g Dark Chocolate
2 Eggs
1/2 cup Light Brown Sugar
3/4 cup Plain/Wholemeal Flour
1/4 cup Cocoa Powder
1/2 tsp Baking Powder
1 tsp Sea Salt Flakes
1. Line a 8"x 8" square Brownie Tin with greaseproof paper
2. Pre heat Oven to 170C/350F/Gas Mark 4
3.Melt Chocolate in microwave or over boiling water
4. Chop avocado and blend together in a stand mixer with the melted chocolate for around 2 minutes
5. Add eggs and sugar and beat for a further 3-4 minutes
6.Sift together flour, cocoa, baking powder and 1/2 tsp sea salt
8.Combine all dry ingredients with wet chocolate mixture and mix for 1-2 minutes
8. Pour into baking tray and bake for 25-30 minutes
9. Once cooked and still warm sprinkle over remaining sea salt and slice into squares to enjoy
